Why you copy the signature, not the code
The right-hand column in Mail's Signatures settings is a formatted preview, not a code editor. If you paste HTML source into it, you see the tags as text. Press Copy signature instead: it puts the formatted version on your clipboard, and Mail keeps the table, colours and links when you paste.
If the font changes after you paste, the "Always match my default message font" box is still ticked. Untick it and paste again. Then send yourself an email to check how it looks in the inbox.
One signature per account
Mail keeps a list of signatures for each account. If you create one while All Signatures is selected, drag it onto an account before you can use it. Use the Choose Signature menu to pick the default for that account.
